1 Pound fresh ripe tomatoes, seeded and chopped
1 Onion, chopped
2 Cloves garlic, minced
1 (4-ounce) can green chilies, chopped
1 Jalapeno pepper, seeded, deveined, and minced or
1/4 to 1/2 Teaspoon cayenne pepper
Juice of 1 lime
2 Tablespoons white or red wine vinegar
1 Tablespoon olive oil
1 Teaspoon salt
1/3 Cup chopped fresh cilantro (optional)
1/2 Teaspoon ground oregano (optional)
1. Combine all ingredient in a large bowl.
2. Mix until well blended.
3. Refrigerate until used. Makes 3 cups
