GF Southwestern Mini Muffins

Ingredients READ ALL FOOD LABELS TO ENSURE NO HIDDEN GLUTEN
1. 2 cups GLUTEN FREE all-purpose flour
2. 1 tablespoon GLUTEN FREE baking powder
3. 1 1/2 Teaspoons Xanthan Gum
4. 1/2 teaspoon seasoned garlic salt
5. 1/4 teaspoon freshly ground black pepper
6. 1 cup shredded Cheddar cheese
7. 1 (4 ounce) can chopped green chilies, drained
8. 2 eggs, beaten
9. 4 tablespoons Dijon mustard
10. 1 cup milk
11. 1/4 cup butter or margarine, melted
Instructions
1. In a large bowl, combine flour, baking powder, Xanthan Gum, seasoned salt and pepper.
2. Add cheese; toss well.
3. Stir in chilies, egg, mustard, milk and butter.
4. Pour over flour mixture; stir until dry ingredients are moistened.
5. Spoon into greased mini muffin cups.
6. Bake at 350 degrees F for 20-25 minutes or until done.
7. Turn out onto a rack to cool.
