Apple Cinnamon Chewy Bars

1 Cup all purpose flour
1 Cup quick cooking rolled oats
2/3 Cup packed brown sugar
1/4 Teaspoon baking soda
1/2 Cup margarine
2 Medium apples, peeled, cored, and sliced
2 Tablespoons sugar
1 Tablespoon lemon juice
1/2 Teaspoon cinnamon
Prepare filling in a medium sauce pan, combine apples sugar, 2 tablespoons water lemon juice cinnamon. Bring apple mixture to a boiling, reduce heat. Simmer for 8 to 10 minutes or till apples are very tender. Set aside. In a mixing bowl combine flour, oats, brown sugar and baking soda. Cut in margarine till mixture resemble coarse crumbs. Reserve 1/2 cup of the flour mixture. Press remaining flour cup of the flour mixture. Press remaining flour mixture into bottom of an un greased 9X9X2 inch baking pan. Spread with apple mixture. Sprinkle with reserved flour mixture. Bake in a 350 degree oven for 30 to 35 minutes or till the top is golden brown. Cool and cut into squares.
