Asian Pasta with Spicy Peanut Sauce

1 pound dry spaghetti
2 lbs. diced tofu
1/2 cup natural peanut butter
2 cups vegetable broth
1/2 cup soy sauce
1/4 cup honey
3 cloves garlic, minced
1 tablespoon chili garlic sauce
1 Medium cucumber peeled and chopped
1/2 cup dry roasted peanuts, chopped
1 cup chopped fresh cilantro
Cook pasta in a large pot of boiling water until al dente. Rinse and drain. Set aside. In a large saucepan, combine peanut butter, broth, soy sauce, garlic, garlic sauce, and honey. Heat until just starts to boil. Add pasta, tofu, cucumbers, peanuts and all but 2 T. cilantro; toss to combine. Chill. Garnish with remaining cilantro. Enjoy hot or cold.Serves 8
