Barley Pilaf with Mushrooms

4 Cups chicken broth or bouillon
2 cloves garlic minced
3 Tablespoon oil
½ teaspoon salt
¼ teaspoon black pepper
1 Large Onion
1 ½ c. Pearl Barley
1 (12 oz. ) Package sliced mushrooms
1 teaspoon dried basil
1 teaspoon dried oregano
In a large skillet, sauté onion garlic and mushrooms. Add barley and sauté for 3-5 minutes or until lightly brown. Add salt, pepper, basil and oregano. Stir in broth and bring to boil. Reduce heat and cover. Simmer for 40-45 minutes until liquid is absorbed and barley is tender. Serves 8.
