Basic Pie Dough

2 Cups all purpose flour
1 Teaspoon salt
2/3 Cup shortening
2 Tablespoons chilled margarine or butter
4 Tablespoons water
Sift together flour and salt. Measure and combine shortening and margarine. Cut half of the shortening into the flour mixture with a pastry blender, or work it in lightly with tips of your finger until it has the grain of cornmeal. Cut the remaining half coarsely into the dough until it is pea size. Sprinkle the dough with water. Blend the water lightly into the dough. You may lift the ingredients with a fork, allowing the moisture to spread. If need to hold the ingredients together add 1 to teaspoon to 1 tablespoon water. Makes two nine inch pie crusts.
