Beef Barley Skillet

2 Pounds stew beef
1 Tablespoon oil
1 1/2 Cups beef broth
2 8-ounce cans mushrooms, do not drain
2 Cups medium pearl barley
1 Envelope dry onion soup
1 16-ounce can stewed tomatoes
1 Cup water
Brown stewing beef in oil. Pour off excess fat and add beef broth. Cover and simmer for 30 minutes. Add mushrooms, barley, onion soup, tomatoes, and water. Cover and bring to boil. Reduce heat and simmer for 45 minutes or until barley is tender and liquid is absorbed. Serves 8
