Beef Fajitas

2 Pounds flank steak, sliced into thin strips and sauteed
2 Large Bermuda onions, slice in thin rings and halved
3 Green bell peppers, sliced in thin strips
2 Teaspoons oil
1 Package fajita mix
2/3 Cup water
1 Tomato, coarsely chopped
16 (6 inch) Whole Grain Flour tortillas
Optional ingredients:
grated lowfat cheddar cheese
light sour cream
1. Sauté onions and peppers in oil. Remove and set aside
2. Saute flank steak into thin slices and sauteed
3. Combine fajita mix with water and with cooked beef to onion and pepper.
4. Simmer 10 to 15 minutes.
5. Add tomato and simmer 5 minutes more.
6. Serve with warm tortillas.
7. Top with optional ingredients. Serves 8.
