Black Bean and Corn Quesadillas

2 t. oil
¼ c. finely chopped onions
1 (15.5) oz. can black beans, drained and rinsed
1 small package frozen sweet corn
½ c. diced tomato
1 small bunch chopped green onion
2 cups Monterey Jack Cheese
8 Large Whole Grain flour tortillas
¼ c. margarine
1/2c. Salsa
½ c. light Sour Cream
Heat oil in a small skillet over medium heat. Add onion and sauté until softened. Stir in beans, corn, and tomato. Cook until heat through. In a large skillet add a small amount of margarine and heat over medium heat. Place tortilla in the skillet, sprinkle evenly wit cheese and green onions and then top with some bean mixture. Place another tortilla on top, cook until golden, then flip and cook on the other side. Top with Sour Cream and Salsas as desired.
