Black Bean and Turkey Chili

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 Tablespoons olive oil
1 onionWashed, peeled and diced
2 Tablespoons chili powder
1 green bell pepperWashed, trimmed and diced
1 small (4.5 oz.) can diced green chili peppers
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon ground oregano
2 lbs. ground lean turkey (or beef)
2 (1 lbs. 13 oz.) cans of tomato sauce
2 (14 ounce) cans black beans
1 (12 oz.) package frozen whole kernel white corn
2 cups reduced sodium chicken broth (or beef if using beef)

1Heat olive oil in large pot.
2Add chopped onions and green pepper to the pot with heated oil. 
3Cook onions until tender- about 3-4 minutes
4Add turkey and cook until turkey is cooked and no longer pink.  Turkey (or beef) needs to reach 165 degrees.
5Add tomatoes, turkey, corn, chili peppers chili powder, garlic, cumin, oregano, (add beef if using beef) broth. Increase heat and bring to boil. 
6Reduce heat to low and continue to cook for 15 -20 minutes. 
7Add beans and cook for 10 more minutes.
