Blue Cheese Chicken

Portion Size: 4 oz. (3 oz. meat plus 1 oz. breading)

Ingredients Notes: 
8 Boneless, skinless chicken breast halves
1/2 cup blue cheese salad dressingSee recipe in cookbook for blue cheese dressing or use light blue cheese. 
1 cup Italian seasoned breadcrumbs
1/2 cup Nonfat milk
For gluten free (GF): Use GF bread crumbs, and GF salad dressing. Always check each ingredient to be sure it is gluten free.

1Preheat oven to 375 degrees.
2Pour blue cheese dressing into a flat bowl.  Thin with a little water or milk if dressing is very thick.
3Place breadcrumbs in a second bowl.
4Dip chicken breast in dressing.  Drain excess.
5Then dip in breadcrumbs, thoroughly covering chicken.
6Bake in oven on a cookie sheet or shallow pan for 30 minutes or until fork tender.Cook until internal temperature reaches 165 degrees F.
