Broccoli Cauliflower Salad

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 cups fresh broccoli floweretsWashed, trimmed and chopped
2 cups fresh cauliflower flowerets Wash, trimmed and chopped
6 green onionsWashed, trimmed and thinly sliced (including greens)
¾ cup sliced radishesWashed, trimmed and sliced very thin
½ cup carrotsWashed, peeled, trimmed and thinly sliced
1 cup light mayonnaise 
Juice of 1 lemon
2 tablespoon sugar
½ teaspoon salt
¼ teaspoon pepper
6 slices baconCrisp cooked, drained and crumbled (optional)

1In a large bowl layer cauliflower, broccoli, green onions, radishes and carrots; set aside.  
2In a small bowl stir together mayonnaise, sugar, lemon juice, salt and pepper.  
3Spread over vegetables. Sprinkle with bacon.  
4Cover and chill. Serve cold.
