Butter Lettuce and Orange Slices with Citrus Parmesan Dressing

8 cups mixed salad greens or butter lettuce, washed and dried well 1 2 medium oranges, peeled, torn into pieces, pith removed
1 avocado, thinly sliced
1/4 cup toasted nuts (sliced almonds, pine nuts, etc)
6-8 sliced green onions
Citrus Parmesan Dressing
1/3 cup  grated Parmesan cheese
Zest and juice of 2 oranges
2 tablespoons chopped shallots
 or minced red onion
½ cup white wine vinegar
1/4 cup extra-virgin olive oil (or half reg. + half lemon oil)
½ teaspoon salt
¼ teaspoon pepper
In a medium bowl, combine the grated Parmesan, orange zest and juice, and the shallots. Whisk in the white wine vinegar. Whisk in the olive oil and finish by seasoning with salt and pepper.
Arrange lettuce on serving plates. Drizzle with dressing.  Top with Avocado, nuts and green onions.
