Chicken Breasts Divan

8 Boneless skinless chicken breasts
1 Tablespoon vegetable oil
2 – 10 oz. packages of frozen broccoli spears
2 Cans cream of chicken soup
1 Cup light mayonnaise
1 Teaspoon lemon juice
1/4 Teaspoon curry powder
1 Cup shredded lowfat cheddar cheese
1/2 Cup bread crumbs
2 Tablespoons pimento strips (optional)
Rinse chicken; pat dry. In a large skillet, sauté chicken breast in oil. Cook on medium heat for 10-15 minutes. Slice chicken into strips lengthwise.Cook and drain broccoli. Arrange broccoli on the bottom of a pan; then chicken slices. Mix soup, mayonnaise, lemon juice, and curry. Pour over chicken. Top with cheese and then top with bread crumbs. Garnish with pimento strips. Bake at 350 degrees for 30-45 minutes. Serves 8.
