Chicken in Hawaiian Sauce

Portion Size: ¾ cup; ½ cup chicken with ¼ cup sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 cup pineapple juice
2 tablespoons olive oil
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 ½ pounds chicken breastCut into 1-inch pieces.
2 tablespoons cornstarch
For gluten free (GF): Use GF soy sauce. Always check each ingredient to be sure it is gluten free.

1In a small bowl combine pineapple juice, brown sugar, cornstarch and soy sauce.
2In a large pan, saute chicken in oil over medium high heat. 
3Add sauce. Bring to boil, stirring frequently. Reduce heat and simmer 20-30 minutes. Cook until internal temperature reaches 165 degrees.
