Chicken Nuggets

2 Pounds boneless, skinless chicken breasts
Vegetable oil
2/3 Cup flour
1/2 Teaspoon salt
3 Teaspoons vinegar
1/2 Teaspoon baking soda
2/3 Cup water
BBQ sauce (optional)
Cut chicken into 1 X 1/2 inch pieces. Heat oil (2 to 3 inches) in a deep fryer or Dutch oven to 360 degrees. Mix flour and salt. Mix vinegar and baking soda. stir vinegar mixture and water into flour mixture; beat until smooth. Dip chicken into batter, allowing excess batter to drip into bowl. Fry chicken in hot oil, 4 or 5 pieces at a time until golden brown and done, about 4 minutes; drain. Serve with BBQ sauce to dip. Serves 8.
