Chicken Nuggets

Portion Size: ½ cup  (4 oz.)

2 1/2 pounds boneless, skinless chicken breasts
Vegetable oil
2/3 cup flour
1/2 teaspoon salt
3 teaspoons vinegar
1/2 teaspoon baking soda
2/3 cup water
BBQ sauce (optional)
For gluten free (GF): Use GF flour and GF BBQ sauce. Always check each ingredient to be sure it is gluten free.

1Cut chicken into 1 X 1/2-inch pieces.
2Heat oil (2 to 3 inches) in a deep fryer or Dutch oven to 360 degrees.
3Mix flour and salt. Separately, mix vinegar and baking soda.  Stir vinegar mixture and water into flour mixture; beat until smooth.
4Dip chicken into batter, allowing excess batter to drip into bowl.
5Fry chicken in hot oil, 4 or 5 pieces at a time until golden brown and done, about 4 minutes; drain.Cook until chicken reaches internal temperature of 165 degrees F.
6Serve with BBQ sauce to dip.
