2 1/2 lbs. chicken breasts, cut into 1/2 – inch slices
1 lb package whole grain pasta
1/2 cup sun dried tomatoes, chopped
4 cups fresh baby spinach
1/2 cup Parmesan Cheese
1.Prepare pasta according to package directions; drain and set aside.
2. Saute chicken in oil in a large skillet over medium-high heat for about 15 minutes, turning occasionally until lightly browned and temperature reaches 165 degrees F.
3. Add sun dried tomatoes and spinach. Stir gently until spinach wilts. Remove from heat, stir in Parmesan cheese. Add pasta to sauce and toss. Serves 8.
