|1 Tbsp olive oil
2 lb boneless, skinless chicken thighs
1/2 tsp. turmeric
1/2 tsp. cayenne pepper
1 tsp. salt
1/4 tsp. pepper
1 (14 oz.) pkg. frozen mango, thawed and diced
1/2 cup lime juice
1 bunch green onions, sliced (greens and white both)
4 cups Brown Rice, cooked
|1.Season chicken with salt and pepper.
2. Heat large pan to high heat.
3. Add oil.
4. Cook chicken until brown on each side
5. Add turmeric, cayenne, mango, and lime juice.
6. Simmer for 5-10 minutes.
7. Serve over rice.
8. Top with green onions. Serves 8
