Chicken with Lime Sauce

Portion Size:  3 oz. chicken and 2 T. sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 ½ lbs. boneless skinless chicken breast or thighs
2 tablespoons cooking oil
½ cup lime juice Fresh lime juice works best.
1 cup apple juice
1 tablespoon cornstarch
2 teaspoons low sodium chicken bouillon cubes or granules
1 lime Washed and sliced (optional).
For gluten free (GF): Use GF bouillon. Always check each ingredient to be sure it is gluten free.

1Spray a large skillet with nonstick spray.  Heat oil in skillet.
2Add chicken and cook over medium heat for 2 to 3 minutes or until tender and no pink remains.  Remove from skillet and keep warm.Cook until internal temperature of chicken reaches 165 degrees F.
3In mixing bowl combine lime juice, apple juice, cornstarch and bouillon.     Add sauce to skillet and cook, stirring constantly. Cook until thick.
4Spoon sauce over chicken and serve.    Garnish with lime slice if desired.
