Chicken with Lime Sauce

2 lb.s boneless skinless chicken breast or thighs
2 T. cooking oil
½ c. lime juice (fresh is best)
1 cup apple juice
1 T. cornstarch
2 t. chicken bouillon cubes or granules
1 lime sliced (optional)
Spray a large skillet with nonstick spray. Heat oil in skillet. Add chicken and cook over medium heat for 2 to 3 minutes or until tender and no pink remains. Remove from skillet and keep warm. In mixing bowl combine lime juice, apple juice, cornstarch and bouillon. Add sauce to skill and cook, stirring constantly. Cook until thick. Spoon sauce over chicken and serve. Garnish with lime slice. Serves 8.
