Couscous with Almonds

4 Cups chicken broth or bouillon
3 t. lemon juice
1 t. grated lemon peel
¼ t. salt
¼ teaspoon black pepper
1 (10 oz.) package couscous
2 cups frozen peas
1 (4oz.) jar diced pimentos, drained
½ c. silvered almonds, toasted
In a saucepan bring the broth, lemon juice, peel and salt to boil. Stir in couscous and peas. Cover; remove heat and let stand for 5 minutes. Stir in almonds and pimentos Serves 8.
