Cream of Cauliflower Soup

1 md Head cauliflower; broken .. into florets
Water to cover cauliflower
2/3 c Chopped onion
1/4 c Butter or margarine
1/4 c Flour
2 c Chicken broth
1 c Light cream
1 c milk
1 t. Sal
t1 c (4oz) shredded mozzarella cheese
1/4 c. Minced fresh chives or .. parsley
InstructionsCook cauliflower in water until tender; drain, reserving liquid and set aside. sauté onion in butter until tender. Stir in flour until bubbly. Mix in broth; bring to a boil. Reduce heat; stir in 1 cup cauliflower water, cream and milk. Fold in cauliflower and salt. Stir in cheese until melted. Sprinkle with chives or parsley; serve.
