Fruited Coffee Cake

1 1/2 Cup chopped, peeled apples, apricots, peaches, or pineapple
1 Cup sugar
2 Tablespoons cornstarch
1 3/4 Cup all purpose-flour
1/2 Teaspoon baking powder
1/4 Teaspoon baking soda
1/4 Cup margarine plus 2 Tablespoons
1 Beaten egg
1/2 Cup buttermilk
1/2 Teaspoon vanilla
1. In a saucepan combine choice of fruit and 1/4 cup of water.
2. Bring to boiling.
3. Reduce heat.
4. Cover and simmer about 5 minutes or til tender.
5. Combine 1/4 cup of the sugar and the cornstarch.
6. Stir into fruit mixture.
7. Cook and stir til thickened and bubbly.
8. Cook and stir 2 minutes more.
9. Set aside.In a mixing bowl stir together 1/2 cup of the sugar, 1 1/2 cup flour, the baking powder and baking soda.
10. Cut in margarine til mixture resembles fine crumbs.
11. Combine egg, buttermilk, and vanilla.
12. Add to flour mixture.
13. Stir just til moistened.
14. Spread half of the batter into an 8X8X2 inch pan.
15. Spread fruit mixture over batter.
16. Drop remaining batter into small mounds a top filling.
17. Combine the remaining 1/4 cup sugar and the 1/4 cup flour.
18. Cut in remaining 2 Tablespoons margarine til mixture resembles fine crumbs.
19. Sprinkle over batter.
20 Bake in a 350 degree oven for 40 to 45 minutes or til golden brown. Serve warm.
