Grilled Pork Chop with Fresh Plum Sauce

Pork Chop with Fresh Plum Sauce

3 oz. boneless, 5 oz. with bone
Ingredients Notes:
8 boneless pork chops, ½ inch thick Trim all visible fat
½ teaspoon salt
1/4 teaspoon pepper
1 teaspoon coriander seeds, crushed
1 Tablespoon oil
½ teaspoon ground ginger
2 Tablespoon cider vinegar
2 Tablespoon brown sugar
2 lbs. fresh ripe plums, halved, pitted and chopped Wash, cut in halve and remove pit. Chop into ½ inch pieces
1 sweet onion, diced Wash, peel and dice

1 In a medium saucepan, heat until hot. Add 1 tsp. oil. Cook coriander and mustard seeds in oil on high until mustard seeds begin to pop, about 1 minute
2 Remove from heat. Discard excess
3 Stir in ginger, vinegar, brown sugar, and set aside. Discard excess
4 Place pork chops in baking dish and season with salt and pepper. Bake for 30 minutes.
5 Remove from oven. Turn over pork chops and spread . Continue baking about 30 minutes or until internal temperature reaches 145 degrees with a 3 minute rest. Cook until internal temperature reaches 145 degrees with a 3- minute rest.
6 In small pan heat 1 tsp. oil. Add onion and cook until translucent.
7 Add plums and sauté until slightly browned. Add spices to plums. Serve over pork chops.
 
Notes:
Time Temperature Sensitive food. Food safety Standards: hold food for service at an internal temperature above 140 degrees F. Do not mix old product with new. Cool leftover product quickly (within 4 hours) to below 41 degrees F. Follow proper cooling procedures. Reheat leftover product quickly (within 2 hours) to 165 degrees F for 15 seconds.
