Ham And Cheese Breakfast Tortillas

12 Eggs or 3 cups egg substitute
2/3 cup nonfat milk
½ pound cooked diced ham
4 green onions, minced
salt and pepper to taste
8 ounces shredded lowfat cheddar cheese
8 (10 inch) whole grain flour tortillas
½ cup salsa (optional)
Beat together eggs and milk. Heat a lightly oiled skillet over medium high heat. Cook egg mixture stirring occasionally until firm. Stir in ham, green onion, salt and pepper. Spoon the egg mixture on top of each tortilla. Sprinkle the eggs with cheese. Fold and roll tortilla to make a roll. Top with salsa if desired Serves 8.
