Hash Brown Potatoes

8 Medium potatoes, peeled and finely diced raw
3 Tablespoons margarine
1 Teaspoon grated onion
Salt and pepper to taste
Wash and scrub potatoes. Peel potatoes and finely dice. In a large skillet melt margarine. Spread the potato mixture over the margarine. Press it with a broad knife into a cake. Sauté the potatoes slowly, shaking them from time to time to keep them from sticking. When the bottom is brown, cut the potato layer in half and turn each half with two spatulas. Brown the second side and serve the potatoes piping hot. Serves 8.
