Hash Brown Potatoes

Portion Size: ½ cup

8 medium potatoes Washed, peeled and finely diced raw. 
3 tablespoons oil
1 teaspoon onionWashed and grated. (optional)
½ teaspoon salt
½ teaspoon pepper

1Wash and scrub potatoes. Peel potatoes and finely dice.
2In a large skillet heat oil. Spread the potato mixture over the oil.
3Press it with a broad knife into a cake. Sauté the potatoes slowly, shaking them from time to time to keep them from sticking.
4When the bottom is brown, cut the potato layer in half and turn each half with two spatulas.
5Brown the second side and serve the potatoes piping hot. Internal temperature 135 F.
