Italian Chicken and Pasta Salad

16 Oz. package of dried rotini or bow tie pasta
2 lb.s sliced grilled chicken, strips
4 sliced Roma tomatoes
1 red onion, sliced
1 (8 oz.) can sliced black olives
1 1/2 cup Italian dressing
¼ t. black pepper
½ c. Parmesan cheese
2 t. parsley flakes
lettuce leaves
Cook pasta according to package directions. Drain pasta. Rinse with cold water and drain again. In a large mixing bowl combine pasta, tomatoes, pepper, olives, parsley and red onions. Toss with dressing until well coated. Cover and chill for 4 hours. To serve, arrange the on lettuce lined salad plates. Stir the pasta mixture and divide mixture among plates. Top with grilled chicken and parmesan cheese. Serves 8.
