Italian Sausage Sandwiches

8 French style rolls
2 Pounds bulk Italian sausage
1 16-ounce can pizza sauce
1 8-ounce can mushrooms stems and pieces, drained
2 Medium green peppers, cut into rings
12 ounces sliced mozzarella cheese
In a skillet, cook sausage till no ink remains. Drain fat. Stir in pizza sauce and mushrooms; heat through. Hollow out bottom halves of rolls. Spoon in meat mixture. Top with pepper rings and cheese. Cover with bun tops. Place sandwiches in a shallow baking pan or on a baking sheet. Cover tightly with foil and heat in a 375 degree oven for 15 minutes or till cheese melts and sandwiches are hot. Makes 8 servings.
