Kale Salad with Parmesan

8 cups chopped fresh kale
3 Tbsp. olive oil
¼ cup lemon juice
1tsp. dried thyme
¼ teaspoon salt and ground black pepper
½ cup freshly-grated Parmesan
In a large bowl, whisk together olive oil, lemon juice, thyme, salt and pepper. Add kale and Parmesan and toss until the kale is evenly coated. Serve immediately.
Tip : Add chopped fresh mango, peaches, plums or apples.  Or toasted pecans, walnuts or almonds.
