Mango Avocado Pistachio Salad with Tangy Lime Dressing

8 Cups torn fresh lettuce, washed
1 Large Mango, peeled and diced
1 Large Avocado, peeled and diced
1/2 Large Red Bell Pepper with stem and seeds removed, diced
1/2 cup finely chopped pistachios (without shell)
1 small red onion, thinly sliced
Juice of 3 small fresh limes or 1/4 c. lime juice
2 Tablespoons Olive Oil
2 Tablespoons Honey
2 Tablespoons Rice Vinegar
2 teaspoons dijon mustard
2 gloves fresh garlic, minced or 1/2 teaspoon garlic powder
2 Tablespoons freshly chopped cilantro or 1 teaspoon dried cilantro
Salt and pepper to taste
Place lettuce in a large salad bowl. Add mango, avocado, red bell pepper, red onion and pistachios. In a small food processor combine, lime juice, olive oil, rice vinegar, honey, dijon mustard, garlic and cilantro. Season with salt and pepper. Toss salad with dressing lightly. Serve immediately. Serves 8.
