Pineapple Crisps

Portion Size: 2” x 2” square

Ingredients Notes: 
2 (20 ounce) cans crushed pineapple, drainedPacked in 100% juice
1 cup all-purpose flour
1 cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
1 egg
½ cup margarine, melted
1 teaspoon ground cinnamon
For gluten free (GF): Use GF all-purpose flour and GF baking powder.  Always check each ingredient to be sure it is gluten free.

1Preheat oven to 350°F
2Spread well-drained pineapple into a 9×9 inch square baking pan.
3In a medium bowl, mix together flour, sugar, baking powder, salt and egg until smooth.
4Spoon mixture evenly over pineapple.
5Pour melted margarine over mixture and then sprinkle with cinnamon.
6Bake in preheated oven for 40 to 45 minutes. Serve hot or cold.Cook until internal temperature reaches 165°F for 15 seconds.
