Pita Pocket Sandwiches


1/2 Cup light mayonnaise
2 Tablespoons prepared mustard
16 Oz. package thinly sliced lean corned beef, beef, ham, or turkey
4 Pita bread rounds
3 Tablespoons pickle relish (optional)
1 Cup shredded Lowfat Swiss cheese
8 Lettuce leaves
Sliced tomatoes

Mix mayonnaise, mustard, and relish.  Use kitchen scissors to cut meat into thin strips.  Add meat to mayonnaise mixture and stir until all meat is coated.  Use kitchen scissors to cut each piece of pita bread in half.  Open bread to make a pocket.  Spoon about 1/2 cup of meat mixture into each half of bread.  Add Swiss cheese, tomatoes, and lettuce to the pocket.  Serves 8.
