Pita Pocket Sandwiches

Portion Size: ½ pita  

Ingredients: Yields: 8 servings

Ingredients Notes: 
1/2 cup light mayonnaise
2 tablespoons prepared mustard
16 oz. package thinly sliced lean corned beef, beef, ham, or turkey
4 Pita bread rounds, cut in half
3 tablespoons pickle relish (Optional)
1 cup shredded Low fat Swiss cheese
8 Lettuce leavesWashed, trimmed and chopped 
Sliced tomatoesWashed, trimmed and diced 
For gluten free (GF): Use GF pita bread or GF bread. Check all ingredients to be sure they are gluten free.

1Mix mayonnaise, mustard, and relish
2Cut meat into thin strips.
3Add meat to mayonnaise mixture and stir until all meat is coated.  
4Cut each piece of pita bread in half
5Open bread to make a pocket.
6Add 1/3 c. meat mixture, 2 T. Swiss cheese, tomatoes, and lettuce each to the pocket.
