Radish Pinwheels

1 Cup finely chopped radishes
1/4 Cup finely chopped green bell peppers
1/4 Teaspoon salt
4 Tablespoons mayonnaise
2 Teaspoons finely chopped chives
1 Teaspoon Dijon-style mustard
Dash pepper
4 Slices white bread
Combine radishes, green pepper, and salt in a bowl. Let stand 15 minutes. Place on piece of cloth and squeeze out excess moisture. In a bowl combine mayonnaise with chives, mustard, and pepper. Add radish mixture and mix well. Using a rolling pin, roll out each slice of bread until very thin. Spread 1/3 of radish mixture over each slice and roll up, jelly roll fashion. Wrap each roll in plastic wrap and chill 3 hours. Using a serrated knife, cut each roll crosswise into 8 slices. Serves 8.
