8 burrito sized flour tortillas (Whole Grain)
1 pound cooked and sliced lean roast beef
8 oz. light cream cheese, soften
1/2 cup light sour cream
1/2 cup chopped tomatoes
1 thinly sliced, small red onion
2 cups fresh spinach leaves, washed
Heat each tortilla in a large skillet. Remove tortilla from skillet. Combine cream cheese and sour cream in a small bowl. Spread each tortilla with cream cheese mixture. Arrange tomato, roast beef and onion on each tortilla Top with spinach leaves. Roll up tight and cover each with plastic wrap. Refrigerate for 1 hour before serving Serves 8.
