3 oz. boneless, ½ c. sauerkraut
Ingredients Notes:
3 ½-4 lbs boneless pork roast Trim all visible fat. Cut across the grain into thin bite size pieces
½ teaspoon garlic powder
½ teaspoon black pepper
4 cups sauerkraut
½ teaspoon caraway seeds
½ cup peeled and diced apple
1 small onion, diced

1 Heat oven to 350 degrees
2 Place roast in a roasting pan and season with garlic powder and pepper.
3 Add sauerkraut, caraway seeds, apple and onion. Cover
4 Bake for 2 ½ hours to 3 hours Cook until internal temperature reaches 145 degrees with a 3-minute rest. Or longer.
 
Notes:
Time Temperature Sensitive food. Food safety Standards: hold food for service at an internal temperature above 140 degrees F. Do not mix old product with new. Cool leftover product quickly (within 4 hours) to below 41 degrees F. Follow proper cooling procedures. Reheat leftover product quickly (within 2 hours) to 165 degrees F for 15 seconds.
