Roasted Brussel Sprouts with Red Onion and Pine Nuts

4 c. Fresh Brussels sprouts, stems trimmed and halved lengthwise
1 Large red onion, peel and thinly sliced
2 T. olive oil
1/4 t. salt
1/4 t. pepper
1/4 c. Pine nuts
Preheat oven to 425 degrees. In a large bowl toss Brussels sprouts, onion, olive oil, salt, and pepper. Arrange single layer on baking sheet. Roast until sprouts are well browned. (About 25 minutes) Transfer to platter and sprinkle with pine nuts. Serves 8.
