Spicy and Sweet Chicken Stir Fry

Portion Size: 1 ½ cups; (approx. ½ cup chicken with sauce, ¼ cup green beans ¼ cup pineapple, ½ cup rice )

Ingredients Notes: 
2 1/2 pounds boneless skinless chicken breast, cubed
1 (16 oz) can pineapple chunks in its own juice
1 tablespoon oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes or hot pepper sauce(optional)
2 cups frozen string beans
1 1/2 cups prepared sweet and sour sauce
4 cups hot cooked brown rice
For gluten free (GF): Use GF sweet and sour sauce. Always check each ingredient to be sure it is gluten free

1Drain pineapple, reserving 1/2 cup juice.
2In a large skillet or wok, heat oil over medium heat.  Add chicken; cook and stir 5 minutes.  Season with salt and pepper.  Stir in reserved juice and red pepper flakes.Cook until internal temperature reaches 165°F. 
3Reduce heat; cook, uncovered, 2 minutes.  Add green beans, pineapple, and sauce.  
4Cover; cook 2 minutes or until heated through.  Serve over rice.
