Spinach Orange Avocado Salad

1 large bag fresh spinach, washed, dried and chopped into bite size pieces
1 teaspoon dried tarragon
1/2 cup red wine vinegar
1 teaspoon Dijon-style prepared mustard
1 cup oil
salt and pepper to taste
2 avocados, peeled, pitted, and cubed
2 tablespoons lemon juice
1 large red onion, thinly sliced
2 large oranges, peeled and diced
In a small bowl whisk together red wine vinegar, tarragon, mustard, oil, salt, lemon juice and pepper. In a large bowl combine spinach, avocado, onion, and oranges Pour over dressing.Toss well. Serves 8.
