Swiss Chard Salad

8 cups of Swiss chard,  finely chopped
3 teaspoons olive oil
2 teaspoons red wine vinegar or cider vinegar
3 teaspoons lemon juice
2 teaspoons honey
½ teaspoon Salt
¼ teaspoon pepper
1 cup diced cucumber
8 radishes, trimmed and thinly sliced
¼ cup golden raisins or dried cranberries
¼ cup toasted sunflower seeds

Cut the stems out of the chard. Stack the chard leaves and roll them into a tight cylinder. Cut the cylinder into ¼” slices, giving you long chard ribbon.  Put chard into a large bowl and add oil, vinegar, lemon juice, honey, salt and pepper, and toss to coat the chard. Add cucumber, radishes, raison and toss to coat.  Top with sunflower seeds
