Tangy Lime Dressing

Juice of 3 small fresh limes or 1/4 c. lime juice
2 Tablespoons Olive Olive
2 Tablespoons Honey
2 Tablespoons Rice Vinegar
2 teaspoons dijon mustard
2 gloves fresh garlic, minced or 1/2 teaspoon garlic powder
2 Tablespoons freshly chopped cilantro or 1 teaspoon dried cilantro
Salt and pepper to taste
In a small food processor combine, lime juice, olive oil, rice vinegar, honey, dijon mustard, garlic and cilantro. Season with salt and pepper. Refrigerate until ready to use. Serves 8.
