Tomato Salad

4 Large tomatoes
1 Teaspoon thyme
1/2 Teaspoon salt
1/4 Teaspoon sugar
1/2 Teaspoon pepper
2 Tablespoons olive oil
2 Tablespoons minced chives or scallions (optional)

Peel and slice the tomatoes and arrange them in overlapping rows around a serving dish. Sprinkle with thyme, salt, sugar, and olive oil, and let stand for an hour or two. You may add the chives or scallions if you wish. You may cut the tomatoes in eighths if you prefer. 8 Servings.
