Tuna Noodle Casserole

15 ounces noodles
2 Large cans tuna, water packed, drained
2 Cans fatfree evaporated milk
1 (8 oz.) package fresh mushrooms
1 Small onion, minced
1/4 Cup diced celery
1 teaspoon poultry seasoning
1 teaspoon paprika
1 Tablespoon margarine
1/4 Cup parsley
1 Cup shredded lowfat cheddar cheese
1 Cup bread crumbs
Prepare noodles according to the directions on the package. Drain. Sauté onion, mushrooms and celery in margarine. In a large bowl combine noodles, tuna, evaporated milk, onion, celery, poultry seasoning, paprika and parsley. Spray casserole dish with non stick cooking spray. Add noodle mixture. Sprinkle with cheese and bread crumbs. Bake in 450 degree oven for about 30 to 35 minutes. Serves 8.
