2 1/2 Pounds cooked turkey breast slices, butterflied and pounded to 1/4 inch thickness
1/2 teaspoon salt
1/4 teaspoon pepper
8 Slices Lowfat Swiss cheese
4 Slices cooked lean ham cut into halves
1/2 cup bread crumbs
1 teaspoon olive oil
2 teaspoon dijon mustard
Preheat oven to 375 degrees. In a small bowl mix together bread crumbs and olive oil. Set aside. Spray baking dish with nonstick cooking spray and place turkey (butterflied open) on baking sheet. Season both sides with salt and pepper. Spread ham slice over one half of each turkey breast. Layer slices on top of ham slices.
Fold turkey over the ham and cheese. Brush the top of each turkey breaks with dijon mustard. Cover with bread crumbs and olive oil mixture. Bake in oven until temperature reaches 165 degrees F. about 30 minutes.
