Turkey Rice Skillet

Portion Size: 1 cup

Ingredients Notes: 
2 lbs. packages ground raw turkey
2 (14 1/2 ounce) can stewed tomatoes
3 Cups water
1 1/2 Cup brown rice 
3 Tablespoon chili powder
1/4 Teaspoon ground black pepper
1 Cup nonfat milk
2 Tablespoons flour
1 Cup shredded low fat Monterey Jack cheeseOr low-fat cheddar cheese

1In a large skillet cook ground turkey till brown.  Drain well. Stir together milk and flour.  
2Stir in tomatoes, water, chili powder, pepper, and rice.
3Bring rice to a boil in a separate pot; reduce heat.  Cover and simmer about 40 minutes or till rice is tender.  
4Add to skillet.  Cook and stir till thickened and bubbly.  Cook and stir 1 minute more. Add cheese and stir till melted.
