Vegetarian Lettuce Wraps

1 lb Imitation ground meat (textured vegetable protein)
2 T. light soy sauce
2 t. garlic powder
1 t. ground ginger
1 cups water
1 tablespoon cornstarch
16 lettuce leaves
1 cup shredded carrots
1 cup green onions, thinly sliced
1 cup sliced red bell pepper
1/4 cup chopped peanuts
2 tablespoons fresh chopped cilantro
In a large pan mix together imitation ground beef, 2 T. soy sauce, 1 t. garlic powder and 1 t. ginger.   Heat on medium high heat to a slow boil.  Reduce heat and simmer 5 minutes. Arrange lettuce leaves, carrots, scallions and red peppers onto a serving plate.  In a medium mixing bowl mix together 2/3 cup soy sauce, 2/3 cup water, lemon juice 2 t. garlic powder, 1 t. ground ginger and sugar.  Divide into 8 small dipping bowls. Divide meat into 16  serving and place in a lettuce leaf.  Spoon meat sauce into leaves and a few vegetables.  Top with peanuts and cilantro. Roll up and dip in dipping sauce or spoon sauce over.   Serves 8.
