Waldorf Wheat Berry Salad

2 cups Cooked Wheat Berries
5 cups Water
2Tbsp. Dijon Mustard
2 Teaspoons honey
1 Large red delicious apple, diced with peeling on
1/4 cup celery, finely chopped
1/3 cup raisins
1 cup nonfat plain yogurt
2 Tbsp. fresh lemon juice
1/2 cup walnuts, chopped
Combine wheat berries with water in a large sauce pan. Cover. Bring mixture to boil. Reduce heat and cover. Cove about 15 minutes until wheat berries are tender but still chewy in texture. Drain any excess liquid and cool.

In a large bowl combine, mustard, honey, yogurt and lemon juice. Stir until well mixed. Add Wheat Berries, apples, celery, raisins, and walnuts. Toss to coat.
Serves 8.
