Wheat Berry Salad (or Barley Salad)

Portion Size: ½ cup

2 cups wheat berriesUncooked. (or barley)
3 tablespoons honey 
3 small garlic clovesWashed, peeled and minced
2 tablespoons lime juice 
2 tablespoons rice vinegar 
2 tablespoons peanut oil 
½ teaspoon salt 
½ cup dried currants 
¼ cup unsalted peanutsChopped
2 cups fresh or frozen peaches or mangosWashed, defrosted and chopped
1 small red bell pepperWashed and finely chopped
2 cups fresh spinachWashed and roughly chopped

1Cook wheat berries according to package directions, place in a strainer, rinse, drain and cool. 
2Whisk the honey, garlic, lime juice, rice vinegar, peanut oil and salt in a large bowl until combined. 
3Add the wheat berries, currents, peanuts, peaches or mangos, bell peppers and spinach in the bowl with the dressing and stir to coat. Chill.
