Wheat Berry Salad

2 Cups Wheat Berries
7 Cups Water
3 Tbsp Honey
3 Small Garlic Clove, minced
2 Tbsp Lime Juice
2 Tbsp Rice Vinegar
2 Tbsp Peanut Oil
1/2 Tsp Salt
1/2 Cup Currants
1/4 Cup Peanuts, chopped
2 Cup Chopped Fresh or Frozen Peaches, defrosted or Fresh Mangos
1 Small Red Bell Pepper, finely chopped
2 Cups Fresh Spinach, roughly chopped
1/2 Cup Chopped Fresh Basil
In a large pot, add water and wheat berries. Bring to boil. Reduce heat and simmer for about 1 hour or until wheat berries are tender. Place in a strainer, rinse, drain and cool. Whisk the honey, garlic, lime juice, rice vinegar, peanut oil and salt in a large bowl until combined.
Place the wheat berries, currents, peanuts, peaches or mangos, bell peppers and spinach in the bowl with the dressing and stir to coat. Serves 8.
