Zucchini Stuffed with Italian Sausage

4 Medium zucchini
1 lb. lean ground beef
1 lb. Italian Sausage (sweet or spicy)
1 small onion chopped,
1 teaspoon fennel
2 teaspoons dried basil
1/2 teaspoon ground oregano
3 gloves fresh garlic, minced
2 eggs
1 c. dried bread crumbs
1 (15 oz) tomato sauce
1 (6 oz) can tomato paste
2 teaspoon sugar
1 cup Mozzarella cheese
1/4 c. Parmesan
1. Preheat oven to 350 degrees. Spray a large baking dish with non stick cooking spray.
2. Cut Zucchini in half lengthwise. With a spoon, scoop out the seeds. Chop seeds and save. In a large bowl, mix together ground beef, sausage, chopped onion, bread crumbs, eggs and the zucchini seeds. Scoop meat mixture equally into all the zucchini halves into the prepared baking dish.
3. In a bowl, stir together fennel, basil, oregano, garlic, tomato sauce, tomato paste and sugar. Spoon tomato mixture over filled zucchini. Bake in oven for 1 hour. Remove from oven. Top with cheeses. Return to oven and bake for 10 minutes
