Avocado Soup

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 Avocado Washed, peeled, seeds removed and chopped
1 large CucumbersWashed, peeled, seeds removed and chopped
2 cups Plain Greek yogurt 
1 cup light sour cream 
½ cup fresh cilantro (reserve some for garnish)Washed, trimmed and finely chopped
2 tablespoons fresh lime juice
1 teaspoon lime zest
¼ teaspoon ground cumin
¼  teaspoon salt 
¼ cup slice radishes (garnish)(optional)Washed, trimmed and sliced

1Combine, cucumbers, avocados, yogurt, sour cream, lime juice, lime zest, cumin, mint, cilantro and salt in large a large bowl.  Puree in a food processor or blender in batches.
2Chill for all least 2 hours.   
3Serve in chilled bowls and garnish with radish and cilantro.
