BBQ Chicken Pizza
Portion Size: 1 small individual pizza

1-pound lean cooked chicken breasts, cut into thin strips | |
2 tablespoons canola oil | |
1 cup BBQ sauce | |
1 (1 pound) loaf frozen bread dough, thawed and divided into 8 pieces | |
½ cup finely chopped red onion | Washed, peeled and finely chopped |
2 cups shredded low fat mozzarella cheese | |
1 tablespoon fresh chopped cilantro (optional) | Washed, trimmed and finely chopped |

1 | Preheat oven to 400 degrees F. | |
2 | In a skillet, cook in oil chicken over medium heat until no longer pink; drain. | Cook until internal temperature reaches 165 degrees F for 15 seconds. |
3 | Spray a large baking pan 15 X 10-inch rectangle with nonstick cooking spray | |
4 | Divide dough into 8. Roll dough into 8 single serving mini round doughs and at to the baking pan. Bake in oven 9 to 10 minutes until golden brown. | |
5 | Remove from oven. In a bowl combine BBQ sauce with chicken. | |
6 | Top crust with chicken mixture, onions and cheese | |
7 | Bake at 400 degrees F for 8-10 minutes or until cheese is melted. | |
8 | Top with Cilantro. Serve hot. |
