BBQ Chicken Pizza

Portion Size:  1 small individual pizza

Ingredients: Yields: 8 servings

Ingredients Notes: 
1-pound lean cooked chicken breasts, cut into thin strips
2 tablespoons canola oil 
1 cup BBQ sauce 
1 (1 pound) loaf frozen bread dough, thawed and divided into 8 pieces
½ cup finely chopped red onionWashed, peeled and finely chopped
2 cups shredded low fat mozzarella cheese 
1 tablespoon fresh chopped cilantro (optional) Washed, trimmed and finely chopped
For gluten free (GF): Use GF pizza dough and GF BBQ sauce. Always check each ingredient to be sure it is gluten free

Directions: Makes 1 pizza

1Preheat oven to 400 degrees F. 
2In a skillet, cook in oil chicken over medium heat until no longer pink; drain. Cook until internal temperature reaches 165 degrees F for 15 seconds.
3Spray a large baking pan 15 X 10-inch rectangle with nonstick cooking spray
4Divide dough into 8. Roll dough into 8 single serving mini round doughs and at to the baking pan. Bake in oven 9 to 10 minutes until golden brown. 
5Remove from oven. In a bowl combine BBQ sauce with chicken. 
6Top crust with chicken mixture, onions and cheese
7Bake at 400 degrees F for 8-10 minutes or until cheese is melted.
8Top with Cilantro. Serve hot.
